How to Make a Perfect Lamb Roast

Choosing the Right Cut of Lamb

For the best roast lamb, we recommend:

  • Leg of Lamb – Classic roasting joint, lean and tender
  • Shoulder of Lamb – Richer flavour, ideal for slow roasting
  • Rack of Lamb – Premium option for smaller gatherings

Ingredients You’ll Need

  • 1 leg of lamb (approx. 2kg)
  • 4 garlic cloves
  • Fresh rosemary
  • Olive oil
  • Salt and black pepper
  • Seasonal vegetables for roasting
  • Gravy
  • Mint jelly sauce for serving

Step 1: Prepare the Lamb

Remove the lamb from the fridge 30–60 minutes before cooking to bring it to room temperature.

  1. Score the fat lightly with a knife
  2. Rub with olive oil, salt, and pepper
  3. Insert sliced garlic and rosemary into small cuts in the meat

This helps the flavour infuse throughout the lamb during roasting.

Step 2: Roast to Perfection

Cooking times will vary depending on your preferred doneness:

  • Rare: 20 mins per 500g + 20 mins
  • Medium: 25 mins per 500g + 25 mins
  • Well Done: 30 mins per 500g + 30 mins

Cook at 190°C / 170°C fan / Gas Mark 5

Use a meat thermometer if possible:

  • Rare: 50–55°C
  • Medium: 60–65°C
  • Well Done: 70°C+

Step 3: Rest the Meat

Once cooked, cover the lamb loosely with foil and leave to rest for 15–20 minutes.
